I found this healthy and nutritious recipe on a fellow blogger food blog Poonam .It's a change to the usual flour cakes we make and can be prepared in max 40 minutes.I just added raisins to the original recipe.Do try and let me know if you like it too :)
- 1 cup semolina
- 3/4 cup grated carrot
- 1 cup yogurt
- 1 cup milk
- 2 tsp olive oil
- 3/4 cup sugar
- 1/4 cup blanched almonds
- 1/2 tsp cardamom powder
- 1/2 tsp baking powder
- 10-12 raisins
- pinch of salt
- Preheat the oven at 350 degrees F and grease the cake pan.
- Take semolina in a mixing bowl. Add sugar, pinch of salt, oil, yogurt and milk. Mix well. Add shredded carrots and blanched almonds. Again mix this really well. Finally add cardamom powder, raisins and baking powder. Mix gently.
- Pour the batter in a cake pan and bake the cake for about 35 minutes.
